Pea & Ham Soup

Some could say this is a winter warmer but honestly with the sweetness of the peas right now, you should be either picking and freezing for the colder months or every dish you eat should contain peas! This soup took me 15mins max to prepare and cook so there are literally, no excuses!

When I’m food shopping I always look in the reduced section. Often times buying it all up or several packets of one item. This week is was peas. 160g reduced to .91p and so I bought 5 packets. It’s important to remember that best before is very different to use before and that accounts for a lot of the food waste as most people rarely see the difference. As with the peas, I used two packets in this soup and popped the rest in my freezer for a later date. The great thing about peas is you can use them in recipes straight from frozen so it’s worth remembering that when looking through the reduced section.

160g x 2 packets of shelled peas

1 onion, roughly chopped

1 old (and very sad looking potato) medium size, roughly chopped

bouillon stock powder

boiling water, salt, pepper and oil.

shredded ham - handful for each bowl (this is totally optional!)

In a pan heat the oil then add in the onions, potato and pepper. Give it a good stir and leave to cook for about 2 minutes on a medium heat until slightly cooked. Add in the peas and cover with boiling water and roughly a 1.5 teaspoon of stock (if you’re unsure just follow the directions of quantity - I never bother). Bring to the boil and check all the items are cooked. Does the potato break apart quite easily? Taste the peas, are they cooked? Then blitz and serve.
